  • 8 oz of your favorite pasta (preferably whole wheat or gluten-free for a healthier option)
  • 4 tablespoons Zimms Organics Extra Virgin Olive Oil
  • 1 bunch of asparagus, trimmed and cut into bite-size pieces
  • 1 cup of fresh peas (or frozen if fresh aren’t available)
  • 1 small bunch of radishes, thinly sliced
  • 1 artichoke heart, cooked and sliced
  • 2 spring onions, sliced
  • 2 cups of fresh spinach leaves
  • Salt and freshly ground pepper to taste
  • Grated Parmesan cheese or vegan alternative, for serving (optional)
  • Fresh herbs for garnish (such as basil or parsley)


  • Cook the pasta according to package instructions until al dente. Drain and set aside, reserving a cup of the pasta water.
  • Heat 2 tablespoons of Zimms COOK EVOO in a large skillet over medium heat. Add the asparagus and peas, sautéing until just tender, about 3-4 minutes. Add the radishes, artichoke hearts, and spring onions, cooking for an additional 2 minutes.
  • Stir in the spinach and allow it to wilt. Gently toss the cooked pasta into the skillet with the vegetables, adding a splash of reserved pasta water to help combine all the flavors. 
  • Drizzle a healthy amount of Zimms HEAL EVOO over the pasta and vegetables, tossing until everything is well coated.
  • Remove from heat and season with salt and pepper. Serve the pasta in bowls, topped with a sprinkle of Parmesan cheese or vegan alternative, and a garnish of fresh herbs.
