This salad could easily become your go-to lunch all month long. It is fresh, nutritious, and most of the ingredients are in season and can therefore be purchased locally.


  • Arugula
  • Avocado
  • Radishes
  • Sprouted almonds
  • Parmesan
  • Protein of choice (salmon, chicken, ground beef, chickpeas, quinoa, etc.)
  • Zimms Organics HEAL EVOO


To make, simply lay a bed of arugula in a shallow bowl. Top with sliced avocado, sliced radish (cooked or raw), shaved parmesan, a handful of sprouted almonds, and your preferred protein. Finish with a generous douse of Zimms Organics HEAL EVOO and a squeeze of lemon.
